    Did not know baconnaise was a thing before you posted this!

    Step 1 - Come to the forum and find a baconnaise recipe
    Step 2 - Make baconnaise
    Step 3 - Make potato salad with baconnaise!

    The dijon mustard that I used was homemade too so this 100% simple ingredients.

    It is was great, the greatest! 👀

    I used 10% bacon fat / 90% grape seed oil.  Kenji goes for 50%/50%.  I will work my way up for my next few batches but I have a feeling that 30% will be the sweet spot.  10% was just a hint of bacon flavor, not overpowering at all.  French fries with baconnaise dip are on the menu tonight.

    I always discarded bacon fat in the compost bin but never again 🤤

    Update:  After a couple of days, the baconnaise has broken and now has the texture of a dressing (liquid).  Something has happened in the potato salad as well, it was great, the greatest, on day #1.  Not as good on day #2.  Bad texture on day #3.
