Help me make a soup please

Christmas I did a big 6 bone prime rib.  I have roughly 3# of bone, with a good bit of meat still on, 2+ lbs of prime rib, and about 3# of deer meat. I’d like to use all that and make a great stew or soup. I don’t have a way to cut the bones in half to get the marrow out. But I am here for all recipes and tips. Please and thank you!

    you could crack the bones with a hammer or something, then simmer them for several hours. May not get a whole lot of collagen out of them, but you'll still get a good bit.

  • 6 bones isn’t going really to get you a bunch of stock, let alone enough for 5 lbs of meat. Grab some more, if you can. Most markets sell soup bones. I like getting neck bones when they have them. They have meat on them and all the good stuff is exposed to go into the stock. As for the rib bones, cut what meat you can off and roast them on a pan with some fat or oil at 425 for 15 mins or so. They’ll soften a bit and you might able to break them with a hammer or something, no big deal if you can’t. Then into the stock pot with enough water to cover and the usual suspects- celery, carrots, onion, bay leaves, peppercorns and maybe some thyme, rosemary, sage, etc. simmer it for 2-3 hrs minimum. When the stock is done, make your soup. Put whatever you like in it. One of my favorite meals when I have the time and ingredients on hand. Enjoy!
