Turkey chili top cook style

Trying this wonderful recipe (blocked with glove to protect copyrighted info) from America’s Test Kitchen with a hack for top cook chili you guys have been posting. 

We are mid cook!  So if it fails it fails but feels good so far.  Browned the veggies in the CIDO direct. Then put the grate on the hook and pulled the plate setter out from it’s hanging wires under the table.  Will do a few posts to try to keep pics in order. 

Egg temp while direct was ~325 and indirect targeting 250-275.  Will put the turkey patty in the chili once it gets to 160 internal or so.
