Chucky Burnt Ends

Options
I got me a nice 3lb chuck roast that I wanted to make into burnt ends. After a little research, I found that there is a divide between cubing before smoking and cubing after smoking. What are your thoughts?

I would do whole and then cube.  Seems like cubing beforehand would lead to a dried out result.

Smoke the whole thing, then cube it up.  That's how burnt ends got started in KC in the first place!

Q 39 burnt ends are pretty good in KC.  I spend 3 months in KC about 3 years ago and loved the Que.
