OT: First couple cooks with new Ooni

So I got an Ooni pizza oven for Christmas and have been playing around with different dough recipes and techniques. What I’ve arrived on so far is a recipe for a 65% hydration dough with an overnight preferment “biga” technique. Definitely some nuances to cooking with the Ooni that I’m still figuring out, but it’s been fun (and delicious) so far. Here are some of the pies that I’ve made

    I "got" one for Christmas as well. Supposed to get here in 3 weeks.

    Hey man that’s a sweet peel. I really like the Ooni so far I think you’ll enjoy it. When you do get your set up and start cooking with it, one tip I learned is to launch the pie with the burner turned all the way up but then to turn it down a bit so you don’t scorch the top the pizza. It’s definitely a fine line between burning the pizza and getting the right amount of char and easy to over shoot.

    A few folks here have Ooni's. Which model Ooni oven did you get?
