Two Part, Two Method Cook (BGE, Instant Pot)

Yesterday turned chilly in our part of Florida so I decided it was time to break out some Lodge cast iron for a late brunch.
I was gifted a pound of sausageby my egging neighbor as a thank-for taking care of his dog and pool over the Christmas holidays.

 I heated up some cast iron, sliced up the sausage, and fried it in my large egg.

Then I fried two eggs in the egg on the small CI. Brunch was served.

I put the remaining cooked sausage in the refrigerator to keep it for later.

Today I used that sausage and a recipe from Simply Happy Foodie to make Instant Pot Black-eyed Peas.

Over Jasmine rice
