I did a batch on 11/29 and opened one of the packages yesterday. I thought it needed another week. The wife liked it, so I guess it’s done.Las Vegas, NV

I am enjoying some that I smoked a few weeks ago. Time to do more this holiday season. I love to smoke the large wedge of Gouda that Costco sells.
I wish the pellet manufacturers sold their pellets in smaller bags. I would really like to try several different brands and types and see how it changes the flavor of the cheese.Clinton, Iowa -
