Redefinition of the perfect steak

Disclaimer:  I do not aim to impress, I prefer to relate. This post is probably more for the duct tape “been there done that and didn’t advertise” crowd.  Instagram can kiss my grits. 

Publix cuts these steakhouse ribeyes comically thick compared to their normal cut.  If time and interest permit, I ask for a “his and hers” where one is 1.5” plus and the other is a generous 1”.   



Around 500 temp.  The thinner steaks were typical for the cross hatch and quick med rare to med. textbook results.  The fat boy was a “covid free but no guarantee 84” after 10 min so it got butterflied. Instead of a real sharp big knife on a cutting board to butterfly on the fly like a pro with a dishwasher on standby, this was “a steak knife hack job without taking it off the grill and preserving my eyelashes.”  It worked. Oh boy every bit was great.
