Rum Barrel Smoked Thighs

Was just going to post about the thighs but the next two pics were some good ones too so what the hell..
Chimichurri with home grown herbs and peppers, corn, scallops, filet, and pork belly... did it all on the mini max. Started indirect with the pork belly then added the filet (reverse sear). Pulled the ceramic disk and filet then added the corn and foiled the belly while I let it get to searing temp. Pulled the corn/filet and did the scallops and then steak. Not bad for a mini max.

Pics out of order... here's the chicken thighs but it's really about the wood below.

Bacon going to rest in the toaster oven during the searing of the rest. I did two Terriyaki during the foil and the other two aren't even worth talking about after trying that.

This is some cool stuff I would have never tried if lowes didn't run out of the basics I usually use. Taste test pending... Smells amazing.

Pretty damn tasty too I have to say it smelled a lot stronger than the flavor it added but it was a good change. I used the rum one this time with a curryish rub and it turned out great.

Yeah those were the main purpose for my post. They're definitely worth having around. They're the only ones I've used so I have nothing to compare to but they're nice and clean and smell amazing so seems good to me.

Definitely give the red wine chunks a try. If they cook anything like the ones I tried before they are fantastic on a prime rib. I'm ordering some from there for sure because I've been out for a while.
