Spinning a Chicken

Got joetisserie going for Full Chicken - first time I have cooked a full bird without cutting out the backbone (spatchcock) in forever.  Prep was super simple as I pulled yard bird from bag, dried and sprinkle with basic dry rub.  joetisserie Makes it easy, plus fun cook as I showed off to neighbor and got a DAMMMN, so there’s that.

I loved the color, and skin crisp in places, but overall not as good as direct raised spatchcock.  Not sure why, but once I pulled, the meat felt texture was a little “wet” and other parts of the skin felt a little greasy.  I still say wings spinning in basket are the best, but this full bird is Work in progress.
