    Thanks for the thoughts @Mark_B_Good.  I am going to ice them per your recommendation.  Yes my issue has been that the breast hits the dome when it is too big.  But I like to stand it up on a beer can so I am sure that is a contributing factor.  I am going to inject my turkey the night before and then have it air dry in the fridge over night.  I decided to inject with a combination of chicken broth, olive oil, and cranberry juice (that is 100% juice blend of mostly apple joice).  The last time I did this I used Orange juice instead of cranberry but at the moment I have an excess of cranberry and am short of OJ so I am going to try it. Also @Florida Grillin Girl Whole Foods messed up my spatchcock!!  It’ll be fine, it’ll be fine, it’ll be fine.  They essentially cut the turkey in half- looks like the cut it between the thighs and then cut the back bone out leaving the skin over the breasts intact.  @Mickey any ideas about this.  I know it will work out fine and maybe I can even turn it into a win because I can arrange the pieces in more of a round shape to fit the grid than I otherwise would be able to. @lousubcap I am enjoying the journey ;). I should have just gotten myself a sharper kitchen shears to spatchcock the darn thing myself...

    @booksw - Sorry to hear that Whole Foods messed up the spatchcock. You would think they would take one second and look it up online if they didn't know what it was! Oh well, I am sure it will still turn out great. Take pics to document your cook. Good luck with it today and have a happy Thanksgiving!

    @Florida Grillin Girl of course it turned out great.  But next time I will try to spatchcock it myself.  I did end up icing the breasts for about 30 minutes before I put it on the egg and I pretty much kept it at 350 the whole time- maybe a bit less.  12 lb done in about 2.5 hours.  The rig I set up worked great for gravy- I had A LOT of drippings.  So much that with the water in the bottom tray I wonder if the turkey maybe had some steam convection going on in there.  Whatever it was- the meat was flavorful and crazy moist.
