Cocoa Rigatoni with Smoked Coffee Rubbed Beef Short Ribs Ragu

Here's my variation on a wonderful recipe from https://www.chasingtheseasons.com/rigatoni-with-dark-cocoa-short-rib-ragu/ . I first smoked my Short Ribs with Dizzy Pig's Redeye Express Coffee Rub and then finished braising them in a silky smooth ragu with red wine, broth, tomatoes, cocoa, pancetta, onions, and garlic. The smokey, coffee notes from the rub and smoker added even more depth of flavor to this incredible dish.
