Everything bagel chicken

SWMBO wants everything bagel chicken breasts tonight. I thought instead of doing the ole usual boring in a pan, in the oven way, I’d throw this to the egg. Anybody done these in their egg? I’m kinda wondering if I should cook em direct high up in the dome or maybe at the felt with the plate setter in? I’m thinking I’ll pound em down a bit with the meat hammer for tenderness before coating.

Sure you can cook them in the egg. You could cook indirect in the pan or on the grid. If it was me I’d prolly go 375-400 raised indirect. One other thing I’d do is place them on a cooling rack after you put on the goodies/seasonings on them and put that rack directly in the egg. This way you do not have any extra handling and will lesson the chance of knocking your pretty seasoning off the meat.

Sounds like a good idea to me. That’s always been my problem with using the pan in the oven. Whichever side is sitting on the pan stays wet and mushy. And the air fryer has a real hard time making em crisp especially if there is a large amount being cooked.Mattman3969 said:Sure you can cook them in the egg. What I do is put the seasoned breasts in a Ziplock bag for a few hours, and then bring the BGE to 325. Put the breasts around the periphery, thin ends outward, and every five minutes, flip them. Lid down, direct, not raised. Remove at your desired temperature. This has been a good reliable way to do chicken breasts. And -- I got the recipe here.

They came out moist but I definitely gotta do something next time get more burn on em. I’m used to the EVOO/lemon juice/fresh garlic/rosemary quickly marinated breasts that are just plain HARD to beat.

Used it on wings. Direct 400 raised.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
