Thanks to Matt we made Mexican Pizza

On Saturday we watched a video by @tarheelmatt on making one of my favorites.  Mexican pizza on the Blackstone griddle.  Here are a few pictures of tonight’s effort.

@ryantt  Just wondering why is that considered a pizza and not quesadilla or tostada?

I thought the same - that’s tostada or chalupa. Looks great!! In Monterrey, Mx they called them something else, can’t remember and can’t reach swmbo.  Tacos de la cidella or something.

@td66snrf and @sumoconnell it’s a riff on taco bells “Mexican Pizza”, which is a guilty pleasure at our house.

A quesadilla has a larger, softer, tortilla folded over, and a tostada has the cheese melted on the bottom.

Taco meat on the Blackstone.  That makes so much sense.  This is going down tonight!
