Reverse seared tri tip

Went to the local butcher and had a 2lb tri tip cut for me on the spot. Sprinkled with my go to tri tip dry rub.  It is coffee based with salt , pepper , garlic , sugar , and even a touch of ground cloves and cinnamon (recipe to follow). I know it sounds iffy but trust me. I only use it with this and it is delicious!  Heated the egg to 250 and brought the meat (indirect)  to 130 with post oak .  Let the meat rest while creating a direct lava fire and then seared 2 minutes per side . The results , as per the last 50 times, were outstanding . Give it a try!  Sorry about the order of photos. Definitely a weakness of this forum.  Never been able to put photos in a specific order on here . Always jumbles them up.

    Dang - that looks great (from a tech guy). I loved living in Atlanta, but am so happy not to deal with the old fashion hate anymore.   It has evolved to the point of ridiculousness IMO.
