Weekend steaks

The wife and kiddos went out town this weekend so I thought I would treat myself to a nice big steak. I, unfortunately, made the mistake of sharing this information with her to which she replied she wanted steak too. Long story short, steak had to wait until she was home.
Picked up a couple of nice prime NY strips from Costco. Dusted with cow lick and reverse seared. Pulled them at 125° and cranked it to 550°- 600° and seared on the spider.

One thing I love about this hobby is the infinite variability. I don’t mean to hijack the thread, but had a very similar cook. I used a 30 day dry aged ny from Whole Foods instead of Costco. Smoked at 225 with hickory chunk to 120. Then grilled some eggplant rounds on grate while I waited for it to get up to 500. Simmered some tallow with thinly sliced garlic and fresh rosemary for 15 minutes, then strained. Brushed both sides of steak with the tallow and onto grill, flipping every minutes to 131 internal. So much fun to play with 120 vs 125, dry aged vs prime, etc.
