Malcom Reeds Monterey chicken and pickled beets

Cooked up a couple of boneless skinless chicken breasts to have with some home canned pickled beets a friend had shared. Found a link to Malcom Reeds recipe for Monterey chicken and gave it a try, albeit without any type of Mexican food seasoning. 


Loaded up with Dizzy pig while I lit the egg


Grilled direct at 325 till 145 internal. Then into the CI with bbq sauce until 165.

crumpled some Left over bacon, piled on and covered with cheddar and jack. back on for 5 minutes.. 



Topped with green onions
 

served with pickled beets and watermelon. Very moist boneless skinless chicken breast. 

Followed up with a bit of dessert. Missions organic whole wheat tortilla filled with apple, brown sugar, a pat of butter, apple pie spice and topped with crushed cheerios( used what was around)






Probably one of the most moist chicken breasts I’ve done.
