Saturday Brisket Cook and Tacos
Got a 15lb prime packer from Costco on Thursday. Put it on the LBGE about 11:45 Friday night and cooked at 240. Used post oak chunks and big green egg brand lump, about a 1:3 ratio. Wrapped after about 12 hours, right as I was exiting the stall. Finally pulled it off at 5. Rested for 2 hours and served with caramelo duck fat tortillas, home made pico, hatch green chili and avocado pico, and smoked queso. Thanks for lookin.
