Chicken - Simple meal

Simple chicken breast today, meal was just a throw together and it worked out to be very good.

Marinated chicken cutlets in:  Olive oil, salt, pepper, red peppers, garlic and 1/2 lemon juice, Rosemary for about 15-20 while I started up the Minimax.



Cooked real fast as expected.



Served with potato salad (from left over mash potatoes),  yellow beans, and tomatoes.



Chicken was moist, and tasty.   Making these tomorrow for chicken fajitas so wanted to try them out today - before the show with family.  

Note: Tomatoes were just fantastic raw!  They are local and I must have been lucky to get a fresh batch.   I think like corn, I will only be eating tomatoes in August from now on.  We do eat corn all year, but just from what we freeze in August.  Joy of living in Canada I guess.
