Chicken and vegetables in the same pan.

Made a big ole platter of grilled chicken and roasted veggies yesterday. Smoked over apple wood and cooked the veggies right in the pan with the chicken. It turned out great. There were potatoes, peppers, carrots, mushrooms and garlic. I had to finish the veggies off in the oven as they did not get as done as I would like due to being under the chicken, but had a great flavor. I will be cooking chicken and veggies at the same time on the grill again.

    That looks good. Which veggies would you say weren't done, or were all of them?
    I wonder if you could have thrown some foil over it when the chicken was done. Dark meat can go pretty long if it isn't direct heat.
    NYT cooking used to feature a lot of 'Pan meals' made in the oven that are similar, lacking of course the good flavors of the egg.

    Or next time, just start the veggies by themselves, then add the chicken 10-15 minutes into the cook.

    Don't  remember details, been a while. Did it in kitchen box I think. We usually pre nuke veg that take longer, eg. Tater and carrot. Pepper, zucchini, mushroom can start raw.
