It was worth it

Prepped a pork butt with bourbon barrel aged maple syrup then applied shigs in pit bbq rub. Put on the egg running at 325. Wrapped it in aluminum foil when it hit 165. Perfect timing since it started raining as I retreated inside.


Like magic the rain stopped when the butt hit 205 degrees. At this time I pulled it from the egg and let it rest while I got ready for my objective; a pulled pork quesadilla 

Once the pork was ready and my griddle was hot I assembled my prize. Tortilla with shigs in pit bbq sauce, pulled pork, jalapenos, pineapple  cheddar cheese then toasted.  

Oh yeah,  it was worth it.
