Double smashed impossible burger

No intent to stop eating meat, but having an alternative that works is useful for guests, in case the remaining processors shut down, etc. have been disappointed in “beyond”, etc. I’m keto, so bean or grain based won’t work. Today, tried impossible. I used kenji’s super smash technique. 2 oz balls. Smashed on cast iron plancha on egg. Seasoned on grill (learned on internet that seasoning before cooking can pull the heme liquid out) with spog. One slice of American cheese between 2 patties. Fried egg on top. Mustard below. Used a charred pasillo pepper as the bun. Probably not for most on here, but really not bad. Good crust and decent internal texture.

Different horses for different courses.. always good to have another option for guests. Those look edible to me!  =)

I recently did smash turkey burgers and my wife was a big fan. I added a little extra olive oil in the meat but want to try a little bit of chicken fat or something next time. Not vegetarian or vegan but another option for people who prefer feathers over fur.

    Looks good from here!

I bought a “beyond” burger last year at a sporting event not knowing what it was (the menu didn’t have an explanation, I thought it’d just have some extra stuff on it to make it “beyond” lol). It was a little off from what I was expecting, It had almost a meatloaf consistency. But I ate the whole thing and didn’t realize I had eaten a meatless burger until my friend pointed it out after the fact. Needless to say it was good enough for me.

Only disappointing aspect of these burgers is they’re not really healthier compared to beef when you look at calories/fat/sodium.

I could never get the internal texture right with beyond.

The health issue is part of why I won’t be doing this frequently. But there are legitimate concerns about the impact of commercial beef production and environmental effects, etc. as well as enough vegetarian/vegan friends to make it worth playing with. I do think the crust is the best part.
