Sirloin Tip Roast

This was about a 3lb roast that was on sale at Sobeys.  Dusted with a blackening rub and cooked indirect for 2 hrs or so at 235F using my Egg Genius.  Quick sear but it really didn’t add anything.   Finished at 125F and sat for a couple of hours.  Tender and delicious. Used some cherry wood chunks
