Summer Dinner, Had Me a Blast

Who else made 5 lbs of potato salad for 4 people for the 4th?  (If tastes better on day 2!)

Tonight:  boneless poke chops, grilled zucchini, grilled peaches . . . and potato salad. 

All egged in an hour between 2 very significant storm cells here in The 302.  Threaded the needle and am happily pretending it’s just normal summer times, with me home and egging on a Monday night. 





No fork in the plated picture, but you get the idea. 

May all your vibes be positive and all your COVID-19 tests be negative!

    Way to stay negative for Covid and positive for your approach to making the best of the hand dealt.  Great looking cook and plate.  Congrats.
