Project Wagyu Brisket

So even in Texas the brisket shortage has been real and pricing has been all over the place. That said I scored a Japanese Black Tahima brisket from a local spot in Dallas.. Decided to go big for July 4th and do tritips, sausage and fajitas as sides lol.  I forget HOW MUCH BETTER Wagyu is... Anyways, happy 4th and here's how it all came out ..

Lump: Rockwood/Fogo
Wood: Cherry, Apple, PostOak, Pecan
