Boneless Short ribs

Hey gang, I’m looking for some advice on egging these. A few weeks ago I did some giant single bone short ribs that came out amazing. I think I did 2 hours on the rack and then about 2 hours covered and they were melt in your mouth. Anyway, these are boneless and more of a rack.

    I served those back on Memorial Day.  I had them in an SV for 72 hours - yup, 72.  Pulled them from the bath, dried them, gave them a quick sear while glazing with reduction of port wine and orange zest.  Served with a roasted garlic and mushroom risotto and roasted Brussels sprouts.  One of my best meals of all time...
