I had to look.  We have an all clad premier set from Costco, bought last summer. I like it, non stick but metal utensil and dishwasher safe.  I like the shape of them, a little taller and narrow than traditional.  We replaced a 28 yo set of copper bottom revere ware, so this has been a nice step up.  Ambivalent so far about the lids, I like that they’re glass but the shape is a little strange.  The set is designed for stacking and storage, so I suppose some of that drives the lid design.
    Love you bro!

I want some stainless pans, but here in the UK Allclad pricing is way too high for me. $300 for a 3qt pan is ridiculous.

We have all kinds of brands, but if I started over again I would buy what restaurant kitchens buy.  Generic aluminum or stainless pots and pans they sell at Restaurant Despot, Costco, Sams, etc.

Misen. I have All Clad, Demeyere, and Kirkland pans, and I find myself reaching for my Misen pans most often. They feel the most comfortable in my hand, and heat incredibly evenly.

Also, they're less than half the cost of a comparable All Clad or Demeyere.

buy one of the 10in skillets for $65 and give it a spin and go from there

I have a ton of that stuff in both stainless and aluminum and it's been a love hate relationship. Lots of scorching on the sides where the disc bottom transitions into thin gauge single-ply steel. That said my favorite piece of cookware is 10qt Vollrath Braiser that's stamped "Made in Italy".

Just Vote- What if you could choose "none of the above" on an election ballot? Millions of Americans do just that, in effect, by not voting.  The result in 2016: "Nobody" won more counties, more states, and more electoral votes than either candidate for president.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.
