Egged Beef Chuck Roasts and potatoes/carrots

I took some inspiration from some older posts and Egged a few chuck roasts ddd u stef with Hardcore Carnivore and smoked with post oak chunks. I filled a drip pan with potatoes, carrots, celery, a few bay leaves, and water then added a few cups of water and a few beef bouillon cubes. I put the pan on the plate setter under the beef to catch the drippings and simmer in it. Everything came out outstanding. The beef was cooked to an internal of 200 and was so tender it fell apart. The potatoes and carrots took it over the top. My favorite was the potatoes and carrots that stuck to the bottom of the pan and had to be scraped out! Would definitely recommend for an easy cook.
