My first brisket

This one came out a little dry, but better than I thought I'd do on first try. Early on in the cook I had to run to the store and while I was gone, my temp drifted low for about an hour. This meant that I didn't have time to wrap the meat and put in cooler at the end, so that may have been part of my dryness issue.
All that said, no one complained!!

Wonderful bark. Well done.
My first turned out beautiful, but I had to let it rest a little too long and it felt a tad dry. Upon reheating with damp paper towels the fat re-rendered and it was perfect. If the jackals left any, treat your leftovers right and maybe you'll get an even better bite!LG BGE
