What do you suggest for method. How long will it take? Smoke or no smoke?

    Really depends on what you’re going for.  If you want a traditional style turkey I’d season with a good rub and lightly smoke with a cherry or apple indirect at 325-350 for roughly 2hrs till you hit 155 IT.   

    OR  you could go low n slow (225-250) direct high in the dome with a 1/2 bowl of lump with some oak for some incredible sandwiches style turkey.  This would probably be a 4-5hr cook. 

    OR you could debone and remove skin and do it Franklin style with just S&P for a smoke then wrap in foil with lots of butter. This is really good.  You’ll have to use the Google machine to search Franklin turkey breast.  I don’t remember exact details on this one.
