Birthday Enchiladas

Every year growing up my stepmom would make chicken enchiladas for my birthday. It has become a bit of a tradition for me. 

I ordered a pre-birthday gift of an assortment of rubs from Dizzy Pig. Grabbed a Molé because, why not? Did a quick brine on some breasts, smothered them with the Molé and onto the grill. 
While the chicken was cooking I made some enchilada sauce. 
Took the chicken off and started the assembly. I make my enchiladas in more of a casserole style versus rolling individual. There are 7 people in this house. All assembled and back on the grill until done. Plated up with truly authentic Mexican rice. Rice a Roni. The boss lady made some homemade guac, which was delicious.

    It was really really good. I made a few more breasts to make salads with for later in the week.
