I have been searching for years, for a recipe that is similar to Take-Out Teriyaki Sauce.

Recently, I fond this one, and I love it. What is unique, is that the mirin is simmered for 10 minutes before adding the other ingredients.

I start with this authentic base and then add whatever else to punch it up. I almost always throw in scallions and garlic.
