Practice will eventually make perfect - Hasselback Potatoes

Try and try as I might I havent gotten the art of nailing this dish yet.  Each one gets a bit better, but still needs improvement.

    I got the cutting technique down I am working on the cooking.

    First time fail hardly cooked
    2nd better
    3rd time was the best- almost to right crispness
    Fridays cook was ok, just not crispy enough and well I forgot to salt them as well.

    I am running these things at 400 half indirect and half direct for an hour.  I think next time I'll flip them to slice side down for a bit to crispen them up.

    I just poke a few holes in a potato and throw it in the microwave for a few minutes. Then, slice (or smash) it open and add butter and s&p. =)

    I finally threw in the towel on traditional hasselbacks and went with Kenji's version:


    Been very happy with the results, but changed up his cheeses.  For Easter I used a combination of parmesan, gruyere, colby, feta, and chedder and was very happy with the finished product.
