Pork Bone Char?

I am curious if anyone here is familiar with bone char - basically animal bones which have been carbonized into charcoal (in this case its pork).    Any idea if this would be better on a low and slow pork shoulder, or a faster cook of pork chops?

Any help would be greatly appreciated!
