Leftover smoked ham and green chile mac n cheese

Decided to make some deluxe macaroni and cheese last night, added leftover BGE double-smoked ham, local green chiles, plenty of tillamook sharp cheddar, and BGE cold smoked Gouda. Topped it with some crumbled crackers and extra cheese to finish. Incredible!

Smoked ham a few months ago, stumbled upon leftovers in the freezer. Thawed and diced. Used 1lb normal Barilla elbow macaroni. Used some of my annual stash of local roasted green chiles, didn’t measure, but should have added more. 

Shredded about 16oz Tillamook sharp cheddar and 8oz smoked Gouda, which I cold smoked back in February. Saved about and handful or two for topping. Boiled 2 cups of water and dissolved 3 tsp of sodium citrate. Then added the shredded cheese slowly, allowing it to melt into an emulsified sauce. I let it come back to a boil and slightly thicken. 

Added cooked pasta, ham, chiles, garlic, cracked pepper. Stirred up well and dumped into 13x9. 

Crumbled up some butter crackers for a toasted topping, but we couldn’t wait long enough for it to get very toasty. Baked at 400 for about 15min, before we caved in and feasted. Could have finished on the BGE, but didn’t feel like messing with it. This was an incredible, smoky, delicious treat!

    Green chili mac and cheese is a favorite at my house. Adding ham just makes it better.
