Grilled Egg plant

As part of my new dietary restrictions I get to try some new recipes.   Grilled egg plant.  

1/4 olive oil 
4 cloves garlic diced
1 tablespoon parsley 
1 tablespoon oregano 
1 egg plant slice 1/2 thick

sweat the sliced eggplant by salting for a least an hour

combine other ingredients and let sit for about an hour.    On med high grill place coated egg plant on direct heat.   About 3 minutes each side.   Cover with remaining olive oil mixture.     

Recipe also call for sprinkles with Parmesan cheese.   But I had to leave out for salt levels.

That looks really good. I do zucchini in the summer months, the kids eat them as fast as they come off the egg.
I plan to try your eggplant recipe.

If you like aubergine (egg plant), try Escalivada. A bit of a faff as there's a lot of peeling to be done after roasting, but the cook is easy and idiot proof!
