A little white balsamic vinegar helps take some of the bitter taste out of them. I cook my in cast iron with red peppers, onion and sometimes asparagus. olive oil and as suggested...some white balsamic.Ellijay GA with a Medium & MiniMax
Well, I married me a wife, she's been trouble all my life,

Love them! If stir frying them then I like to Blanche them first. To mix it up from the evo salt/pepper I will do paprika with some shredded mozz on top after I pull off the grill. Cast iron is fun with cut side down like others have said. I also like to just toss in a basket until outside skin is charred.
