Pecan Chicken - Ideas?

Hey everyone!  I haven't posted for a while; been on the road quite a bit.  I picked up these great looking pecan chicken breasts from Fresh Market.  I was thinking about putting some oil in the cast iron skillet and getting the egg hot (fry them up nice and crusty).  Any other ideas on how you'd prepare?  Clearly baking is an option as well.  Making some Brussels sprouts to accompany along with some home made pasta my wife is cranking out as we speak!

Thanks all, have a great Sunday.

  • Excellent.  Fried them in cast iron, came out awesome.

Just saw this.  I would’ve either cooked in CI or baked.   If you liked them here is a rub I use a lot that should be very similar in flavor.
