Cornmeal Back Bacon Brunch

Always a winner here.  Cornmeal Back Bacon Roast.   

Indirect on the Minimax at 350.   Minimax does a great job of cooking these small roast.







At around 145 (was going for 140, but was busy), coated with some BBQ sauce (Adam Perry Lang) 



At 150, pulled it and let it rest.   Also cooked some sausage for the week while the Egg was going, wasn't planning on eating it for this meal so did not take a photo of the cook,  but it looked so good we did have it and included on the plate shot:

Made some strawberry pancakes, topped with heated strawberries and of course Maple Syrup.  Peaches were some somewhere far far away ... they were OK, need to wait for August here for great peaches.

    Fancy eating there. Didn't know about Cornmeal Back Bacon Roast. Will look into it more.
