Last Weekend’s Beef Rib Cook

Been looking for beef plate ribs for a while now. The only thing I can find online are super premium grade wagyu beef ribs which I’m sure are good, but I don’t want to drop $100 on a rack. Lucked out and found some choice grade racks at Costco for $5 a lb. Picked up a couple racks and rubbed them with a homemade Texas rub I kind of made up. Put them (tight squeeze on the large) at 275. Went a lost faster than I thought, only ended up taking about 4 hours total. I was surprised by that but they turned out great.
