Read the article. I do not disagree with it and it does not disagree with anything I have stated. Basically, it outlines there there are diminishing marginal returns with rises in intramuscular fat. Essentially, the jump from no fat to 3% fat gives substantial flavor (aka palatability). However, the jump from 3% to 6% yields improved flavor, but not as much as the previous 3% increment. As you slide along this scale and extrapolate, I can see the point where more fat simply gives you hardly anything. Those pictured steaks look something like 80 to 90% fat content.

I don't doubt they taste good, but how much better are they than a steak with 60% fat??  Seems to me that the marbling can end up being almost a status symbol and people covet it for the sake of it.....just my take.... and I am not alone:
https://www.bloomberg.com/news/articles/2017-03-08/is-wagyu-the-world-s-most-overrated-steak The article surmises that Waygu is good, but only in small bite sized servings. AND, it should not be considered "steak" but something of it's own. If you want steak, do not eat Waygu. He compares it more to foie gras (duck liver pate)

on a side note, there is more than just prime. there is prime + prime - and prime0

Anything above 12% fat is prime0. Prime+ just states "abundant" fat.

FYI, the lower right is classified as "moderately abundant"

Most of those steaks don’t look very good to me.

I wouldn't pay 'prime' prices for 4 or maybe 5 of those steaks...

they are not all rated prime....only the lower, right two are prime. You can disagree all you want, this is from the USDA.

Fig. 5.16. Marbling standards used for the USDA Beef Quality grades. Left column (top down): slight, small, modest. Right column (top down): moderate, slightly abundant, moderately abundant.

  • Could we do a GoFundMe to get Botch high speed internet access?  Then ask for zooming to be restored if goal is met.

  • Cmon @botch I was just playing around, this place is way better in my opinion without all the picture loading.  I’m not sure the problem wasn’t on their end either, I had the same problem switching to LTE or WiFi

Damn those look good and they are all nice and trimmed up. I walk the whole red meat section every time I am there.

I actually made Costco a destination road-trip today as I do some volunteer work in a hospital close by.  Their beef selections were nothing to buy beyond the ribeye cap (can't find elsewhere at such a good price) but that was sufficient justification for me.
The briskets were in sad shape compared to their offerings two-three years ago.  (Lots of hard fat and poorly trimmed in my limited experience).  Thus other suppliers are gonna get a bump in business.  I talked brisket with a meat cutter I have known long before he moved to Costco and he has been disappointed as well but that is what they get from their source (Sysco) so he said. I recognize it is regional and whenever there I always work the meat section.  FWIW-

No, it's not imported. Tissue machines are running at same capacity as always and no increase in butts to wipe. It's all about hoarding and panic.

that's a half pallet more than any Sam's or Costco in my zip code had.

Luckily, I've been a hoarder way before it became fashionable =)

I think a lot of people feel they may want/be required to, stay at home, as they're doing in China.  They're stocking up on other things, anything you wouldn't want to be without (medicines, etc).  Just a guess on my part.

Once a lot of people have it I want to be out shopping around people the least amount possible. I had already bought a 36 pack of TP but my Costco had some in store this morning so I grabbed another. Plus it was on sale. It’s gone by now they only had a couple pallets left.

Aren't there MUCH more pressing items that you and others should be buying? Like if you are concerned about it, how about protein powder, vitamins/supplements, canned foods, meal replacement shakes, water storage devices, water filtration devices, gasoline storage, gasoline, etc. How about diapers and baby wipes? Wipes would be a whole hell of allot more useful.

TOILET PAPER is like the very least of my concerns if I am scared of catching a bad disease in public. It isn't even on my radar, nor should it be. It's like hoarding shampoo and conditioner because you will be avoiding hair salons. Just totally nonsensical. There are HUNDREDS of things more important to horde before TOILET PAPER makes the list or gets prioritized for storage.

It always amazes me how the general public really is....stupid for lack of a better word.
