How to avoid burnt drippings???

I had a problem a while back with the egg... drippings from chicken/etc were burning on the plate setter and causing some really foul smoke.  I tried using an aluminum drip pan with some moisture, but if I don't stay on top of refilling it for a long cook (like a butt), it evaporates, and the drippings burn in the drip pan, causing the same issue.  Any suggestions???
