How to avoid burnt drippings???

I had a problem a while back with the egg... drippings from chicken/etc were burning on the plate setter and causing some really foul smoke. I tried using an aluminum drip pan with some moisture, but if I don't stay on top of refilling it for a long cook (like a butt), it evaporates, and the drippings burn in the drip pan, causing the same issue. Any suggestions???

Air gap your drip pan. Your plate setter is really hot and the conduction between it and the pan is what is causing the scorching. Use small aluminum foil balls, or even spare nuts laying around your garage, and elevate your drip pan.XL & MM BGE, 36" Blackstone - Newport News, VA
