    Hey Cap- The lamb was delicious, and bite tender, even the fat!  But I did not get a crust.  I don't have ready access to fresh herbs, so I made a paste of extra virgin olive oil and Dizzy Pig Mediterranish® rub. Rubbed it on the ribs and let the rack set for an hour or so while I got the Large Egg ready.  Rack was 1-2" above gasket, I use the CGS R&B grid frame.  I cooked at 350°-375° 'til 130° internal.
    What did I miss?  I can see how the Simply Recipes recipe you sent me would brown and crust, starting at 400°.  kind of hard to do that, unless I used the Small Egg for the 400° browning part.

    Glad it was tasty.  Sounds like a great audible with the paste.
    I'm guessing that the extra 2" of elevation above the fire had an impact on the crust deal.  I get some drip grease flame action early on when I start fat side down.  Wish I had a sure-fire answer.  
    BTW- I just aim for the 350-375*F range and go for it.

  • Looks like you nailed that bad boy! Might just have to go ahead and attempt to reproduce that one with the recipe that you shared. 

    And here I thought you were only on the forum for the brown water banter. 😉

    I did not start with the fat side down!  I will certainly revisit this cook!  I will use the small egg this time, plenty of room on the grid and it's at gasket level.
