Turketta in bacon weave

Deboned a turkey for grinding and decided to save half a breast for this unplanned cook.

Used above recipe with these mods:
- dry brined the turkey couple of hours and omitted salt in the rub/paste
- added rehydrated dehydrated orange peel
- wrapped turkey roll in bacon weave
- cooked low and slow in Traeger Ranger at 250 till IT 150
Came out real nice/juicy, the orange peel kicked it up a notch! Should have saved the other half breast too.

Funny @caliking mentioned dexterity, this was almost a flop!
More info on the prep/cook:
- I used shrink wrap to tighten the roll sans bacon, then put in freezer 15 min to firm up. Would be easier if you have meat glue.
- Anyone can weave a bacon mat after watching online vids.
- I placed the roll in the middle of the mat seam down, then brought up mat from both sides, i.e. kept the seams opposite each other.
- Started cooking bacon seam down, about 10 min into the cook I took a peek and noticed the log started drooping. Panic mode! butcher strings saved the day
We use dehydrated peel in tea and baking too, so versatile and the price is right.
