Dual Function Metal Top vs. Ceramic Top

We just drove 3 hours to find a store that had Sunday hours and sold the egg. We got home, watched the video, got fired up, opened the box and discovered that the grill came with the ceramic top and not the Dual Function Metal Top that is explained at great length in the video. We were going to attempt ribs tomorrow, but don't know how to cook using the ceramic top. Anyone out there have eggsperience with one of these? How do you control the temp? Someone please help the 'Green'horns.

    You're going to need to improvise to be able to control your temp. The ceramic top is only really good for putting out your fire. Maybe a small metal plate with some small holes drilled in it....or just a plate that you slide over to create a small opening in the top might do.

    Sue, you need something flat, that can take heat, to partially cover the top, like a piece of metal (I guess a piece of foil at the worst) to control air flow out the top. Alot depends on what your are cooking, and at what temp. No matter what-fire it up!

    Untill you obtain the metal dasiy wheel your ceramic cap will work fine for controlling air leaving the egg. Set it on slightly ajar so air can escape. Remove ceramic cap before lifting the dome up and return when the dome is back down. When your done cooking just put the cap on all the way and close the bottom draft door. Good luck and have fun.

    I cooked a lot of meat and different types of meats today and eggspearmented using NO top, I went from 250 degrees all the way to 800 degrees. Start the thickness of a credit card or less for low heat and open up as you need more heat, you'll be amazed at how you can control with no cap.

    I have the old style daisy without the slider top. With all vents fully open, I peg on 350. As Clay Q says, by tilting the ceramic top, you can achieve your desired temp.
    Just beware of it hanging there when you lift the lid. Good luck with your cook and have a great Independence Day!![p]David

    Chef Wil, I agree, i seldom use the daisy wheel and never the ceramic(too much risk breakin if you forget about it and open the egg)to control temp. With the bottom vent just the slightest bit open and no top will hold 250 all day long.[p]Scott

  • eggor, Does not using anything on top give you a more even heat. I seem to always get a hot spot in the back of my BGE.
