Dinner is postponed, need advice!
Our Christmas dinner that was planned for today has been canceled due to the flu and rescheduled for a week from today. I have a prime rib that I salted, has been uncovered for two days that I am unsure what to do with. I'm thinking I can let it ride in the fridge as is like dry aging for another week. My main concern is what affect the salt will have on the meat for that long of a time period. Should I cook it up and get a new one next week? Vacuum seal and refrigerate?

I would think it will just dry it out more. You could rinse it off, wrap it in plastic wrap and stick it back in the fridge.
