Poor Man’s Pastrami

I saw a recipe on Pinterest for pastrami made from a chuck roast instead of a full brisket. Since I wasn’t 100% sure I liked pastrami, I figured it’s best to tinker with an $8 chuckie instead of a $30-$40 brisket.
Turns out, I DO like pastrami!



Made a brine with brown sugar, salt, pickling spice and peppercorn. Let it soak for 5 days, and took it out of the bag, and rinsed it. Rubbed it down with coriander, ground mustard, pepper, brown sugar and garlic and smoked at 250-275 until it hit 205. I put it in an aluminum steam pan covered in foil for about 30 minutes to rest.
Granted, I’ve never had true pastrami, but this is tasty! I made a sandwich with Swiss cheese and russian dressing. (On sourdough). Fully aware that anything other than rye is sacrilegious but man, I can’t stand rye bread!

Interesting recipe. By the way, the article talks about a Chuck Roll being hard to find - but you can buy them at BJs or Costco (at least around here). At Costco, they don't sell it in the case, just ask the butcher and he'll bring out a big cyovac package of Chuck Roll. I always cut out the Chuck Eye to use for steaks or a roast - see Youtube for instructions. I have cooked the rest of the roll like a brisket (never thought to make Pastrami, though).
