Uneven Beef Brisket thickness
My wife bought a brisket home for the egg. The thickness ranges from 2.5 inches down to 1". I am concerned that this will cook very unevenly and result in very dry brisket on the 1" end. Should I cut it in half and cook each one separately monitoring temperature for each half?
Thoughts and recommendations appreciated! Thanks in advance!

Did she buy a flat or a whole brisket? Can you roll the thinner part up under itself to even things out?-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

Cook it whole. Avoid the thinnest part being in the direct heat. If you can't do that, make a little foil shield. All briskets have that variation.
Some people trim anything thin enough that will burn... but the burned parts can be good eating treats.
"Dry brisket" is more often than not undercooked.______________________________________________I love lamp..
