Double Cut Pork Chop Cook

Got a package of double cut pork chops from Porter Road as they were sold out of the regular. Never cooked them before does anyone have any recommendations on how to cook them? Any good recipes I should check out. Let me know. Thanks in advance!

Not necessarily a recipe but I wet brine, sous vide, then sear on the egg.
You can brine with pretty much any sliced you want. I typically throw in water, kosher salt, brown sugar, garlic, thyme.
Serve with cooked apples on top. -

Was thinking maybe go indirect with until a probe reads 135 or so and then give it a good sear.

I also like to wet brine pork. If you don’t want to make a brine and happen to have the stuff on hand, pickle juice will do the trick. I save it when I’m out of pickles.
