I just ordered two gold grade Wagyu briskets. Any advice on finish temps or smoking methods any of you have that differs from a Costco prime will be welcomed....

    That is quite a leap in brisket grade.  The search function here is your initial friend.  Bottom line- the process for any brisket cook is the same.  The audibles are as variable as the cook.  The finish-line is the same although (key word) it may but not likely happen at a lower temperature.  Be ready for a great quantity of fat rendering-substantial drip pan is a necessity.  FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    It will finish a lot sooner. I’ve pulled golds that were in the 183-185F range that were perfect. Some had ridden as far as 193F. Basically keep an eye on it sooner than you would a Costco prime. Don’t wrap it either.
